Dyna-Glo Offset Smoker – Heavy-Duty Charcoal & Wood Smoker
We built this offset smoker for backyard pitmasters who demand authentic barrel-style smoking without cutting corners on durability. The horizontal chamber sits alongside a vertical firebox, letting you manage indirect heat and wood smoke exactly the way traditional offset cooking requires.
Thick-gauge steel construction holds heat for hours while six height-adjustable cooking grates give you over 1,300 square inches of total cooking space. Whether you're smoking brisket overnight or layering ribs and pork shoulder for a weekend cookout, the chamber depth and airflow control deliver results that charcoal kettle grills and electric units can't match.
Our heavy-duty offset design includes a built-in temperature gauge, multiple dampers for precision airflow, and a removable ash pan that makes cleanup faster. The porcelain-enameled steel lid seals tightly, and the cool-touch spring handles let you adjust vents mid-cook without gloves.
- 1,382 sq. in. total cooking area across six height-adjustable chrome-plated grates
- Heavy-gauge steel firebox and main chamber for superior heat retention
- Stainless steel temperature gauge mounted in the lid
- Adjustable flue stack and firebox dampers for precise airflow control
- Porcelain-enameled steel chamber lid and firebox door
Heavy-Gauge Steel Construction & Heat Retention

We manufactured the firebox and main chamber from thick-gauge steel that holds temperature through cold mornings and windy afternoons. The offset firebox sits lower than the cooking chamber, so rising heat and smoke naturally flow across the grates before venting through the adjustable stack.
Porcelain enamel coating on the lid and door resists rust and outdoor weather while sealing in moisture. The chamber walls are thick enough to maintain steady 225–275°F smoking zones without constant fuel adjustments, and the reinforced seams prevent warping even after dozens of all-day cooks.
Cooking Capacity & Grate Configuration

Six chrome-plated cooking grates span the main chamber, delivering 1,382 square inches of total cooking surface. Each grate slides onto height-adjustable brackets, so you can position them closer to the heat source for searing or raise them for slow, indirect smoking.
The main chamber alone holds six full racks of ribs laid flat or three whole packer briskets. The lower warming rack keeps sauces and sides warm while your proteins finish, and the grate spacing accommodates hanging hooks if you prefer vertical smoking for poultry or sausage.
Airflow Control & Temperature Management

Dampers & Venting
The firebox intake damper and top-mounted flue stack work together to regulate oxygen flow and exhaust. Closing the intake damper chokes the fire for lower temperatures, while opening both dampers wide pushes more heat through the chamber for faster cooking or searing.
A built-in stainless steel temperature gauge mounts flush with the lid, giving you a real-time reading at grate level. Cool-touch spring handles on both the firebox door and main chamber lid let you adjust vents and add fuel without reaching for insulated gloves mid-cook.

Common Questions About This Offset Smoker
The smoker provides 1,382 square inches of total cooking space across six height-adjustable chrome-plated grates. The main chamber alone holds six full racks of ribs or three whole briskets laid flat.
You can position the grates closer to the firebox for higher heat or raise them for slower smoking. The warming rack keeps sauces and sides warm while your proteins finish on the lower grates.
Adjust the firebox intake damper and the top flue stack to regulate airflow. Opening both dampers increases oxygen flow and raises the temperature, while closing the intake damper chokes the fire for lower, slower heat.
The built-in stainless steel temperature gauge shows the chamber temperature at grate level. We recommend starting with both dampers halfway open and adjusting in small increments until you reach your target zone.
This offset smoker runs on lump charcoal, briquettes, hardwood chunks, or split logs. The firebox depth accommodates logs up to 18 inches long.
For overnight cooks, start with a bed of lit charcoal and add hardwood splits every 60–90 minutes. The front-access ash drawer makes it easy to remove spent ash without disturbing the main cooking chamber.
Assembly typically takes 60–90 minutes with basic hand tools. The firebox, main chamber, and cart components arrive separately, and you'll attach the legs, wheels, shelves, and cooking grates using the included hardware.
The instruction manual includes step-by-step diagrams, and most buyers report straightforward assembly without needing extra help. All welds arrive pre-finished, so you only need to bolt the sections together.
Yes, the heavy-gauge steel construction holds heat well in cold or windy conditions. You may need to add fuel slightly more often when the ambient temperature drops below freezing, but the thick chamber walls prevent rapid heat loss.
Position the smoker in a sheltered spot away from strong wind, and consider using a windbreak or patio wall to reduce heat loss from the firebox side. The porcelain enamel coating resists moisture and rust year-round.
Empty the ash drawer after every cook or when it reaches about two-thirds full. The front-access design lets you slide the drawer out without opening the firebox door or moving the smoker.
Wait until the ash cools completely before disposal. Regular ash removal improves airflow and prevents buildup that can block the intake damper.
The smoker does not include a cover. We offer a separately sold weather-resistant polyester cover sized for offset smokers up to 73 inches wide.
A cover protects the porcelain enamel finish and prevents rust on exposed metal surfaces when the smoker sits outdoors between cooks. Use tie-down straps to secure the cover in high winds.
